Two methods: 1 - if you have shell access to the webserver, httpd -v will show you what version of apache is running and some information about modules. 2 - if you don't have shell access, then simply look at a page that will not be found on the server. As long as the server isn't using a custom error page, there will be the Apache version along the bottom.
