How do I get Apache to default to index.php3?

Just add the line 
DirectoryIndex index.php3
into your .htaccess file. On some server types it has to be only in 
your main directory, on some others in every directory you want 
index.php3 to be your index file. You can also use more index files 
than one by just entering them in the order in which they should be 
searched like
DirectoryIndex index.php3 index.html foo.phtml
