What is the difference between the instance types OLTP, liveCache, Content Server and Business Warehouse?

None really at this time, so you should choose OLTP.
It might be that in a future version, the instance type will disable or 
enable some capabilities. And it is useful for the SAP support as the 
instance type shows which kinds of applications run on a specific server
