How can I edit the way server-generated directories appear?

Within limits, yes the directory listings are configurable via the
directives provided by mod_autoindex:
http://httpd.apache.org/docs-2.0/mod/mod_autoindex.html
See in particular the ReadmeName and HeaderName directives that
allow you to add text above and below the listing, plus
the IndexOptions directive which can do a bunch of things.
