What is the TCP or UDP port number I need to open in firewall to use the NIS and NFS services?

For nfs it 2049 TCP _and_ UDP. The nfsd binds to this ports.
Further, its possible that you'll need 1110 TCP _and_ UDP too. On this 
ports you can find nfsd-status and nfsd-keepalive.
No clue about NIS.
to get a listing of any services listening on a port the following 
commands should produce similar output;
sockstat -4
or
netstat -na | grep LIST
from this firewall rules can be created as needed
