For travelling to the not so toutisty places, I would recommend that you
visit Manali, Leh and the Laul&Spiti valley. This is not typically a
touristy stretch beyond manali. Also you should visit Kalimpong in the
north-east and go to Kerela aswell in the south. These places are quiet
distant from each other so you may choose to visit only some of them
depending on your time availability.
In terms of food, you must try the local cusines but make sure that the
water you have is bottled, thats the easist way of getting ill since
your immune system may not be able to handle it. Also depending on the
time of year you plan to travel, do check the weather in the place you
plan to visit as it varies vastly in India.
